Welcome to Makoto Vail

Makoto Vail is a new restaurant from award-winning chef Makoto Okuwa, located at The Grand Hyatt Vail. A master of Edomae-style sushi, Chef Makoto Okuwa has more than twenty-five years of experience in traditional Japanese cooking, which he combines with his own innovative style. Makoto has acclaimed restaurants in Miami, Washington, D.C., Panama City, Mexico City, and São Paulo, with Makoto Vail being Chef's first location in Colorado.

Seasonal Closure | Closed April 12th - 15th, 20th - 22nt, 27th & May 1st - 22nd

Reservation dining times are limited to the following:

1 - 4 Guests | 1 hour 30 minutes

5 - 6 Guests | 2 hours

7 - 9 Guests | 2 hours 15 minutes

Complimentary Valet Parking
